Did you know that Saudi Arabia is the third dates producer according to the UN Food & Agriculture Organisation (2013). Saudi Arabia produces almost 100 kind of dates! Amazing, right?!
The biological name of the date palm is Phoenix dactylifera, it is a plant from the palm family. This tree can reach 23 m in height with leaves that can be up to 6 m long!
Date palm can take from 4 to 8 years to produce fruits. And dates ripen in different stages:
- Hababouk (the stage after pollination)
- Kimri (not ripe)
- Khalal (Crunchy)
- Ritab (Ripe, soft)
- Tamer (ripe, sun dried)
We can eat dates from the Khalal stage. You can find below a graphic about the evolution of the date with the corresponding days post pollination.
